چکیده

Two factors have stimulated the present intense investigation of acrylamide neurotoxicity. These are the health hazard accompanying the vast and increasing industrial production of acrylamide, and the promise of illuminating the mechanism of dying-back disease in the human nervous system by employing acrylamide as an experimental tool. The present paper discusses the industrial uses of acrylamide, its regulation, and the prevention, detection and clinico-pathologic features of human in-

A review of acrylamide toxicity and its mechanism

Acrylamide (AA) is an important industrial chemical agent that is mainly used in the production of polymers and copolymers. Recently it has been attention because of its production in the diet at high-temperature (>120 ºC) processes such as cooking, frying, toasting, roasting or baking of high carbohydrate foods. According to high exposure to acrylamide, recognition of its toxic effect is ...

Neuroprotective effect of thymoquinone in acrylamide-induced neurotoxicity in Wistar rats

Objective(s):Acrylamide (ACR) has broad applications in different industries. It also forms in food during heating process. Oxidative stress has a critical role in ACR-induced neurotoxicity in both in vitro and in vivo models; therefore, the aim of the current study was the evaluation of effects of thymoquinone, the main constituent of volatile oil from Nigella sativa seeds in ACR-induced neuro...

Acrylamide in Potato Chips, Its Formation, Reduction and Identification: a Review

Acrylamide is a chemical compound that can be produced at high levels in carbohydrate and aspargine rich foods when treated at high temperatures. The risks of acrylamide to health and its toxic properties (neurotoxicity, genotoxicity, carcinogenicity and reproductive toxicity) were demonstrated by the Scientific Committee on Toxicity, Ecotoxicity and the Environment in 2001. Potato and bakery p...

Crocin reduced acrylamide-induced neurotoxicity in Wistar rat through inhibition of oxidative stress

Objective(s):Acrylamide (ACR) has many applications in different industries. ACR damages the central and the peripheral nervous system in human and animals. Importance of ACR-induced neurotoxicity encouraged researchers to find both different mechanisms involved in ACR neurotoxicity and potent neuroprotective agents. Therefore, this study was designed to investigate the protective effect of cro...

Chrysin Reduced Acrylamide-Induced Neurotoxicity in Both in vitro and in vivo Assessments

Background: Acrylamide (ACR) is a well-known industrial toxic chemical that produces neurotoxicity, which is characterized by progressive central and peripheral neuronal degeneration. Chrysin is a natural, biologically active flavonoid compound, which is commonly found in many plants. The antioxidant and neuroprotective properties of chrysin have been demonstrated. Methods: In this study, the ...
